Tasty Pork Chops

I am thinking of sharing some “carnivore” recipes for the food that I have been consuming as a carnivore. After all, what carnivores eat, the rest of you can eat as well. 

As you may be aware, the strict carnivores only eat beef (or any other meat and eggs), salt and water. Some allow dairy like milk, cheese, butter and yogurt as well as spices and herbs. They also cook using animal fats like bacon grease, lard, butter, ghee or tallow.

I am a relaxed carnivore – as long as I do not eat any carbohydrates – rice, noodles, fruits, cakes etc, I am good. I use condiments sparingly. I am also leaving vegetables out for the interim because I don’t miss them hah..hah..hah…

One of the meat that I eat very frequently is pork. I love my babi! Most of the time I love pork chops and this is my favorite way to prepare one of my much loved meals.

This is my preferred cut – collar pork chop. The slices have gotten thinner due to price increase. One packet of three slices like this is 400g.


The marinade that I use is simply a mixture of crushed garlic, light soy sauce, sesame oil and pepper.

Just mix everything up and set aside.

I put the pork chops into a zip lock bag and pour the marinade into the bag. I use my hand to massage the marinade all over the meat. The pork chops are left to marinate overnight in the fridge.

The next day I take the marinated pork chops out to stand to room temperature. To cook, if bacon fat is available, I will use it. Otherwise I just use olive oil to pan fry the pork chops for 4 minutes per side.

Once I turn the pork chops, I drop a cube of butter as well as a tablespoon of light soy sauce into the pan. I basically flip the pork chops to coat in the soy sauce/butter mixture.

Once plated, I like to apply some freshly cracked pepper for added flavor.

I also like to add sliced onions sometimes. I add the onions when turning the the pork chops to cook the other side. Then in with the butter and light soy sauce. Remove the pork chops from the pan but continue to saute the onions until caramelized.

The taste is phenomenal if I may say so myself.

Or to make it even more luxurious, fry some bacon first and use the bacon fat to fry the pork chops. Once you are done, cut the bacon into small pieces and scatter on top of the pork chops.

Ingredients :
– 3 slices collar pork chops (approximately 400g)

Marinade (mix all together)
– 1 tbsp light soy sauce
– 3/4 tbsp sesame oil
– 2 cloves garlic, finely minced or crushed using garlic press

– 1/2 onion, thinly sliced

– 1 cube butter
– 1 tbsp light soy sauce
– pepper to taste

– cooking oil

Method :
1. Put pork chops into a zip lock bag and pour marinade into the bag.
2. Use your hand to massage marinade to coat the pork chops.
3. Leave in the fridge to marinate for a few hours or overnight.
4. Before cooking, take the pork chops out to stand to room temperature.
5. Heat cooking oil in the pan and pan fry the pork chops for 4 minutes per side.
6. After 4 minutes, flip the pork chops.
7. Add sliced onions, soya sauce and butter.
8. At the end of cooking time, remove the pork chops to a plate.
9. Continue to saute the onions until wilted and caramelized.
10. Pour sauteed  onions on top of the pork chops and serve. Add pepper for extra oomph!
