Reverse Searing

Before I start my post, has anyone of you who use the Blogger platform experienced any problems of late?

I noticed that my blog take longer to launch and also there is a lag when publishing comments. Same thing with post preview, it takes ages to load. I also noted that a few blogs on my side bar cannot function and I am unable to re-link because the layout function would not load! Haiz! Hopefully this issue is resolved soon or else I will have to create another blog.

Anyway. Quite recently I found out that there is another way to cook steaks. This technique is reverse searing.

Basically a steak is cooked in the oven first and then seared briefly in a very hot cast iron pan. Hmm… quite interesting, so I decided to give it a go.

This is a nice piece of sirloin steak that I purchased from Feast Market. I placed it in my air fryer and cooked in at 200C for 3 minutes on each side. Yes, I flipped the steak after 3 minutes and cooked the other side for another 3 minutes.

It is therefore, partially cooked.

Then give it a good sear in a very hot cast iron pan for one minute per side.

Let rest for 5 minutes and then slice.

Ooohhhh…it turned out medium rare, moist and succulent. So good.

I guess the advantage of this method is that the steak gets cooked all around and you don’t have to sort of do some stunt to cook the sides of the steak using the pan.


So this will be the way I cook steaks from now on.
