Cookies Galore 1

Yeah..yeah…my cookie baking engine was stoked amid sputters and wheezes. There were baking ingredients leftover from the earlier batches and why not bake more and spread the joy? (and fats!)

The result of my industrious endeavor – 5 canisters of cookies and a few more pieces to fill 4 smaller containers (for me to munch while watching the telly heh..heh…).

These are not new recipes but tried and tested ones with a little bit of tweaks here and there. That’s the nice thing about cookies. It is very hard to get them wrong with minor (or even some major) adaptations.

This one is my Cranberry Cornflakes Cookies done lazy style i.e. with the crushed cornflakes thrown into the batter.

And just because I had some Nestum leftover from an earlier batch, I simply coated the remaining batter with the cereal. Hence one basic recipe, two styles.

This is my favorite. Tweaked from Malted Milk Chocolate Chip Cookies which I attempted back in 2013. I added cocoa powder and you guessed it…. Nestum.

I did not have enough chocolate chips. So instead of adding them into the batter, I just pressed three onto each cookie. Of course some ended up with only two chocolate chips each.

These coffee flavored ones were incredibly crunchy. I tweaked the recipe from my Coffee Walnut Chocolate Chip Cookies. The walnuts in my fridge expired and I had to throw them away.

So I had to improvise and added crushed cornflakes instead. Unfortunately the coffee flavor was muted because I used a different coffee flavor.

For the final batch, I added more crushed cornflakes and I preferred this batch as it had a lot more crunch.

As I was preparing the cookie batters, I jotted down what I added and what I tweaked. I guess I will want to document the recipes properly to share and for future reference.
