Anybody having family/friends over for Christmas lunch or dinner? You know, I like going to other people’s house to eat other people’s food. Because other people’s food always taste better hah..hah..hah…
Well, hosting a lunch or dinner at home can be daunting if you are the cook. It can be fun though, if it is a small party but if you are feeding a whole bunch of people, it can be stressful.
One way to ease the stress is to have a potluck or cook something easy, preferably something that can be made ahead before the guests arrive. Or even mix and match home cooked and restaurant bought.
My favorite is always roasted chicken. You can marinate the chicken the day before and roast it on the day of your party. As for the marinade, you can always buy those bottled chicken seasoning.

You might was to have a salad prepared in case you have a guest like my mum. She must have veggies with her meals, preferably a salad.
This Kale Salad can be made hours ahead of time as it benefits from sitting.

Or for something colorful and festive looking, try this Strawberry Salad. The dressing can be made a day ahead. Prep all your salad ingredients and toss with dressing just before serving.

Eh, how about dessert? I only have one easy dessert. This one can be made a day or two ahead of time.
